Instructions
- Prepare the Vegetables: Chop the onion, slice the carrots and celery, chop the zucchini, and mince the garlic cloves to have all ingredients ready for cooking.
- Sauté Aromatics: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion, sliced carrots, and celery, then sauté until they become softened and fragrant, about 5-7 minutes.
- Add Garlic and Liquids: Stir in the minced garlic and cook for another minute. Then add the vegetable broth, chopped zucchini, peas, canned diced tomatoes with their juice, and dried thyme. Season with salt and pepper according to your taste.
- Bring to Boil and Simmer: Increase the heat to bring the soup to a boil. Once boiling, reduce the heat to low and let it simmer uncovered for 20-25 minutes. This allows the flavors to meld together and the vegetables to become tender.
- Final Seasoning and Serve: Taste the soup and adjust salt and pepper if needed. Serve hot as a nutritious and comforting meal.
