Instructions
- Preheat oven and melt butter: Preheat your oven to 375°F (190°C). Place the 1/2 cup butter in the bottom of a 9×13-inch baking dish and put it in the oven just long enough for the butter to fully melt.
- Layer chicken and vegetables: Once the butter has melted, remove the dish from the oven. Arrange the shredded rotisserie chicken in a single layer over the melted butter, then evenly distribute the frozen mixed vegetables over the chicken.
- Prepare biscuit topping: In a bowl, combine the Cheddar Bay biscuit mix along with the included seasoning packet and 2 cups of milk. Stir until well blended into a smooth batter. Pour this mixture evenly over the chicken and vegetable layers in the dish. Spread lightly with a spatula but do not stir.
- Make and add sauce: In a separate bowl, whisk together the cream of chicken soup and chicken stock until smooth. Pour this sauce evenly over the biscuit topping; again, avoid stirring to keep the layers distinct.
- Bake the cobbler: Place the baking dish uncovered in the preheated oven. Bake for approximately 45 minutes or until the biscuit topping is very golden brown and just slightly jiggly in the center.
