Description

This White Chocolate Strawberry Cake combines the delicate sweetness of strawberry-infused cake layers with a rich and creamy white chocolate cream cheese frosting. The cake layers are moist and flavorful thanks to the strawberry Jello mix and pureed strawberries, while the luscious white chocolate icing adds a smooth, decadent finish perfect for special occasions or a delicious dessert treat.

Ingredients

Scale

For the cake:

  • 2 ⅔ cups Cake flour
  • 3 teaspoons Baking powder
  • 1 cup Softened butter
  • 1 box Strawberry Jello mix
  • 1 cup Granulated sugar
  • 4 large eggs
  • 2 teaspoons Vanilla extract
  • 1 cup Milk
  • ½ cup Pureed strawberries

For the icing:

  • 4 oz Cream cheese
  • ½ cup White chocolate chips
  • 3 tablespoons Heavy whipping cream
  • 34 cups Confectioners sugar

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure the temperature is ready for baking the cake layers evenly.
  2. Mix Cake Batter: In a large mixing bowl, beat together 1 cup granulated sugar, the entire box of strawberry Jello mix, and 1 cup softened butter until well blended and creamy. Then add the eggs, vanilla extract, milk, pureed strawberries, cake flour, and baking powder. Beat all ingredients together until the batter is smooth and fully incorporated.
  3. Prepare Cake Pans: Grease two 9-inch cake pans well to prevent sticking. Divide the cake batter evenly between the two pans, smoothing the tops for even baking.
  4. Bake the Cake: Place the pans in the preheated oven and bake for 30-35 minutes or until the cakes are cooked through and a toothpick inserted into the center comes out clean.
  5. Cool the Cakes: Remove the cake pans from the oven and place them onto a baking rack to cool completely to room temperature. Once cooled, carefully turn the cakes out of their pans onto the rack or serving surfaces.
  6. Prepare White Chocolate Icing: In a saucepan over medium heat, combine white chocolate chips, cream cheese, and heavy whipping cream. Stir continuously until the cream cheese and chocolate chips are completely melted and smooth. Remove from heat and transfer the mixture to a mixing bowl.
  7. Add Confectioners Sugar: Gradually add 3 to 4 cups of confectioners sugar to the melted mixture, about 1 cup at a time, stirring well after each addition until you reach your desired smooth and spreadable icing consistency.
  8. Assemble the Cake: Place one cake layer on your serving tray or stand. Spread a generous layer of the white chocolate icing evenly on top.
  9. Top and Ice Cake: Place the second cake layer over the iced first layer. Use the remaining icing to cover the top of the cake smoothly for a beautiful finish. Serve immediately or refrigerate until ready to enjoy.

Notes

  • Make sure to use room temperature ingredients for best mixing results, especially butter, eggs, and cream cheese.
  • Pureed strawberries add natural flavor and moisture, but be careful not to add too much liquid to keep the batter balanced.
  • For a firmer frosting, chill it briefly before icing the cake.
  • This cake is best served within 2 days for optimal freshness and texture.
  • To enhance strawberry flavor, garnish with fresh strawberries or white chocolate shavings.
