Description

Zhoug is a vibrant and spicy cilantro sauce originating from the Middle East, perfect for adding a fresh, zesty kick to various dishes. Made with fresh cilantro, parsley, jalapeno peppers, garlic, and an aromatic blend of spices, this versatile condiment is easy to prepare using a food processor. Ideal as a dip, marinade, or topping, zhoug brings bold flavors and moderate heat to your meals.

Ingredients

Scale

Fresh Produce

  • 6 jalapeno peppers, trimmed and sliced (or hot green chiles)
  • 2 garlic cloves, peeled
  • 1 packed cup fresh cilantro leaves
  • 1/2 packed cup fresh parsley
  • 1 lemon, juiced

Spices

  • Kosher salt, to taste
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground green cardamom

Oils & Fats

  • 1/2 cup extra virgin olive oil

Instructions

  1. Chop the Jalapeno and Garlic: Start by chopping the jalapeno peppers and garlic cloves. Add them along with a pinch of kosher salt to the bowl of a food processor fitted with a blade. Pulse a few times until they are coarsely chopped.
  2. Add the Seasonings: Next, add the fresh cilantro leaves, parsley, ground cumin, ground coriander, and ground green cardamom to the food processor. Blend the mixture until it forms a thick, cohesive paste.
  3. Finish the Sauce: Transfer the herb and spice paste to a bowl, then stir in the extra virgin olive oil and freshly squeezed lemon juice. Mix well to combine all flavors. Your zhoug sauce is now ready to enjoy!

Notes

  • Adjust the number of jalapenos based on your preferred spice level.
  • Use fresh herbs for the best flavor and vibrant green color.
  • Store zhoug in an airtight container in the refrigerator for up to one week.
  • This sauce pairs wonderfully with grilled meats, falafel, hummus, or as a spicy condiment on sandwiches and wraps.
  • If you prefer a smoother texture, continue processing until fully blended.
